Olive Groves:
Our Correggiolo olives grow near our farmhouses in the San Gimignano hills. Each tree is carefully monitored and harvested only when the olives reach perfect maturity.
Harvesting:
The olives are hand-picked using combs, gently dropping onto nets to avoid damage. They are placed in crates and taken to our mill, where they are processed within 24 hours to preserve aromas, freshness, and nutritional integrity.
Processing:
Cold extraction (<23°C), carried out through a fully mechanical, temperature-controlled process. Probes monitor the temperature throughout extraction to ensure it never exceeds 23°C, safeguarding the oil’s purity and distinctive profile.
Color:
Opalescent, with bright green tones.
Fragrance:
Intense, persistent, and fruity.
Flavour:
Decisive yet harmonious, with excellent structure and balance, finishing with a steady, spicy note.
