Olive Groves:
Olives grown near our farmhouses in the San Gimignano countryside. Each tree is monitored and harvested only at peak ripeness.
Harvesting:
Hand-picked using combs and collected on nets to avoid damage. The olives are placed in crates and taken to our mill, where they are processed within 24 hours for maximum freshness.
Processing:
Cold extraction (<23°C), fully mechanical and temperature-controlled, preserving the oil’s natural aromas, flavors, and quality.
Color:
Clear, dense, with green tones and golden reflections.
Fragrance & Taste:
Very fruity, balanced, and harmonious — the pure expression of the Frantoio variety.
